Basic Bread / Rolls

 

BREAD / ROLL RECIPE  (Nina Spitzer)

DRY INGREDIENTS           

  • 2 cups tapioca starch           
  • 2 cups rice flour    (OR  ... 1 1/2 rice flour & 1/2 soy flour)            
  • 3/4 cup powdered milk (dry)           
  • 4 tsp xanthum gum           
  • 1  1/2 tsp salt            
  • 1/4 cup sugar       

WET INGREDIENTS           

  • 1  1/2 cups of warm water           
  • 4 eggs            
  • 4 TBL oil           
  • 1 tsp lemon juice      

YEAST INGREDIENTS             

  • 1/2 cup warm water           
  • 2 tsp sugar           
  • 4 tsp dry yeast

Directions:           

In a large bowl, mix together all of the DRY INGREDIENTS and set aside.             

In a small bowl, mix together the YEAST INGREDIENTS  by adding the sugar to the water and then the yeast.  Stir together and then set aside.   (it will begin to grow and foam.)  In a third bowl, mix together well all of the above WET INGREDIENTS.           

Now, add the WET INGREDIENTS to the DRY INGREDIENTS, adding the YEAST INGREDIENTS last. Beat well (by hand) for 2 min.   The dough will still be quite sticky.  Cover and allow to rise once in a warm place until doubled ( about 1/2 hour).  DO NOT MIXED AFTER IT HAS RISEN.

FOR BREAD LOAF -  Place into one large greased and floured bread loaf pan.  Bake 350 for 25 -30 min*.

FOR ROLLS - Spoon onto well greased pan (2” plops for big rolls) and bake at 350 for 25 min or so*.  ** Bake longer if needed to get to a good brownish color.*** You can sprinkle with poppy or sesame seeds.You can make these into hot dog buns if shaped that way. 

Cool and then freeze.  To reheat...pop into microwave for 30 seconds.
